Hummus

Recipe from Lorilyn Glenn

NOTE: This is essentially a double batch of hummus.

2  cans garbanzo beans (keep 1/4 cup of the liquid)
½ C tahini
6 Tbsp lemon juice
2-3 garlic cloves, pressed OR 3-6 roasted garlic cloves
1 tsp ground cumin
salt and pepper (optional)
cayenne pepper (to taste)

Drain beans and reserve liquid. Blend beans and other ingredients, along with ¼ cup reserved liquid. Process until the mixture is smooth.  Add more liquid or a little olive oil until desired consistency is reached.  Serve with pita wedges.
