Zucchini Bread

Recipe from Amy Bartley

3 eggs
1 C oil
2 C sugar
2 tsp vanilla
2 C zucchini, shredded
8 ½ oz crushed pineapple
½ C nuts
3 C flour
2 tsp baking soda
2 ½ tsp cinnamon
1 tsp salt
¾ tsp nutmeg
¼ tsp baking powder


Mix all ingredients together.  Pour into greased bread pans.  Bake at 350F about 1 hour or until done.
Makes 2 loaves
